Baked apple pie oatmeal

Ingredients 
1/2 cup of oats 
1/2 cup and two tbsp of non dairy milk(add more if needed) 
One red apple 
Vanilla 
Cane sugar 
Cinnamon 
One tsp of baking powder 
Apple pie spices(you don't really need to add this) 

Chop the apples and mix everything together in a bowl untill you have a creamy mixture, bake in the over for aroun 25 minutes or more if needed at 445 

Vegan scramble eggs with veggies

Ingredients 
•1/2 cup of chickpea flour
•1/4 cup of water 
•veggies of your choice(peppers,mushrooms,spinach,onions,tomatoes) 
•black pepper and salt to taste 
•olive oil or coconut oil 

Instructions 
1-heat a small frying pan over medium hoy with a drizzle of oil 
2-whisk together the chickpea flour, water,veggies and condiments 
2-pour into the hot pan as of formin a large pancake. Allow to cook until edges look dey then break up with a wooden spoon as if making scramble eggs. Keep stirring until the mixture begins to dry and form clumps. When donte the mixture should be fairly dry and still a little soft 
3- serve with toast and add a drizzle of sirracha on top!! 


Roasted paprika and sirracha chickpeas

I really don't know why I have never roasted chickpeas, they are so good to add in salad or just as a snack 
For this you will need
•as much chickpeas (cooked) as you want 
•one tbsp of olive oil(use too it you are roasting a lot of chickpeas) 
•paprika 
•pepper
•cumin
•1-2 tbsp of sirracha 

In a bowl add all te ingredients and make sure that the chickpeas are fully coated, then roast in your oven at 430 for around 35 minuts or untill the chickpeas are crispy, make sure they don't burn

Peanut pesto

Ingredients 
One handful of basil leaves 
Lemon juice 
One handful of peanuts 
One tbsp of olive oil 
One tbsp of water 
One pinch of salt 
One pinch of pepper 

Blend everything 

Brownie fudge banana ice cream

Ingredients 

For the ice cream 
4 bananas 
One tbsp of vanilla 
One tbsp or cacao 

For the fudge 
One cup of medjool dates 
2 tbsp of raw cacao 

Method 
Blend two bananas with the vanilla and then two bananas with te cacao powder swirl both and put it in the freezer then blend in a food proccesor the dates(you can soaked them before of they are hard an way to dry) and and the cacao, blend until you have a creamy mixture and ten make some balls (yes like bliss balls) chop and stir a few of them in your banana ice cream and you are done 


Red velvet banana ice cream

Ingredients 
4 frozen bananas
2 tbsp of raw cacao powder(cocoa or carob are good too) 
One tbsp of vanilla 
Dates (or any sweetener of your choice 
One small raw beet if your food proccesor is good enough if it isn't then just use a cooked one 

Procces al the ingrendients in a food proccesor/ high speed blender.

Vanilla chia seed pudding

Ingredients 
One serving 
1/4 cup of chia seeds 
1 cup of non dairy milk 
Sweetener of you choice 
Vanilla extract 

Mix everything together put in a jar an let it sit overnight 
This is the easiest breakfast/dessert you could eve have, and it's so tasty and healthy

Raw vegan chilli

Ingredients 
For the base:
-Approximately 2 cups of ripe tomatoes (cherry, grape, or roma tomatoes)
-1 cup of oil free sun dried tomatoes
-3 dates 
-one tsp of paprika, cumin and chilli flakes if you are feeling brave. 

Veggies to add in:
-Another 1/2 cup of sliced cherry or grape tomatoes
-1/2 cup of raw corn
-1/2 cup of diced zucchini
-1/2 cup of diced celery
-1/2 cup of diced red bell pepper
-half a cup of chopped carrots
-half a cup of chopped green onions
-1 cup of sliced mushrooms
-half cup of red onions
-half cup of diced cilantro
-quarter to 1 cup of diced avocado (1 avocado) optional 
-1 diced jalapeƱo pepper (optional)


Blend your ingredients for the base and then just chop all your veggies and mix with your sauce, wrap in lettuce or cabbage wraps and you are done!

Split pea soup

Such and easy soup, split peas are my favorite and I think that they make a great combination with cumin, so good. 

Ingredients 
200 gr of dried split peas 
1 big carrot 
1 small onion 
Swiss chard  
Cumin 
Salt and paper 
1 cup of water

Cook your split peas first in a cup of water untill you feel that they are quite soft, peel and cut the carrots and onions, and the Swiss chard add the spices bring to a boil, then just let it simmer for around  30min when the veggies are fully cooked and the peas has soaked most of the water and are super soft and mushy it means that it's ready. 


Rice porridge

This is a perfect recipe if you have left over rice and you are tired of the daily oatmeal, this is super creamy, warm and delicious. 

You will need:
-One cup of cooked brown rice( feel free to use any rice that you have, I think that with sticky rice this would be great) 
-A little bit less than 1/2 cup of any nondairy milk of your choice 
-1 tbsp of vanilla 
1 tbsp of cinnamon 
-Sweetener of your choice 
-1 ripe banana 
-A handful f raisins 

Add everything to your casserole (mash the banana) except the milk, you want to add the liquid little by little if you want the rice to be thick, cook everything untill the rice soaks most of the liquid and you are ready to enjoy this creamy porridge

Pumpkin and butternut squash stew

Ingredients 
Lentils 
Butternut squash 
Pumpkin
1 carrot
1/2 cup of tomato paste 
Onions 
Swiss chard 
Paprika 
Cuminn 
Pepper and salt to taste 

Cut and wash all your veggies into cubes, bring to boil with the lentils and the spices add the tomato paste and let it simmer untill everything is soft and creamy. 

Cinnamon raisin peanut butter

Ingredients 
300 gr of peanuts
1/2 cup of raisins 
Cinnamon 
Salt if desire 

In a food processor, process your peanut until you have the creamy texture, remember you have to be patient because it will take some time, when it's creamy add half of the raisins and a 2 tsp of raisins and the salt if using, keep blending untill it's all creamy, add the rest of the raisins and mix with a spoon
 

Tahini and bell pepper dressing

This is such a perfect dressing for a raw salad, so fresh and super yummy 
Ingredients 
2 tbsp of tahini 
1 red bell pepper 
Lime juice 
Orange juice 
Green onions 

Blend everything until desired consistency.

Bircher muesli

This is one of my favorite breakfast, I find this really refreshing and creamy, it taste like summer. 


What you'll need: 
1 grated apple 
1/2 cup of oat 
1/4 cup of almond(or any milk of your choice) 
1/4 cup of orange juice(you could use apple as well) 
1 tbsp of chia seeds 
One tbsp of cinnamon 
One tsp of vanilla
Any sweetener of your choice 
Add nuts, dried fruit 

Then in a modicum bowl combine everything, cover, and leave in the refrigerator overnight. Serve with more almond milk and top with more nuts or dried fruit if you want to 


Banana oat pancakes

Today I was craving pancakes so badly, it was insane, I never have pancakes, I'm just not a big fan of them because I find them always drowned in syrup or butter, and ew no. 
Anyway, I woke up today feeling like pancakes but guess what, I didn't had any kind of flour? So I came up with this 
Pancakes made of oat flour, super easy, super tasty. 

Here's what you need: 
 1 banana 
One tbsp of chia seeds + 3 tbsp of water( let it soak for aroun 7 minutes to make a chia egg) 
One tbsp of baking powder 
One tbsp of vanilla 
One tsp of cinnamon 
3/4 cups of rolled oat ground into flour 
Around 8 tbsp of any non dairy milk of your choice 

Blend everything together, then fry them with a little bit of coconut oil and wala, yummy gooey banana pancakes, I topped mine with my cinnamon raisin peanut butter, enjoy .

Overnight banana oatmeal

This is such an awesome recipe, cooking your oatmeal overnight in the refrigerator with no actual cooking, great right? Breakfast on the go. 

The only ratio you need to remember is 1:1 . You'll soak 1 part of rolled oats with 1 part of any non dairy milk (I use almond) . You can use less liquid if you want a thicker oatmeal of more of you like it runny. 
The just add some vanilla extract, mash one banana with the mixture , some maple syrup,agave or whatever you want to make it sweeter. Then I added some raisins and one tbsp of chia seeds, give it a stir, put it into a jar, then let the jar sit overnight in te refrigerator, in the morning just top with more sliced bananas, any nut butter of your choise, dried fruit and nuts( I aded almond butter, raisins and dates) and that's it, enjoy!

Homemade almond butter


You really need some patience to do to this
So the ingredients for making your homemade almond butter are: 
3 cups of Almonds 
A food processor 
And patience. 

Place the aond in a food processor, and process for 20-30 minutes stopping and scraping down the sides as needed throughout the process. The almond butter is ready when the oils have released and the resulting butter is very smooth and cramy (BE PATIENT!!!) 


Feel free to add salt or spices. 

Citrus almond dressing


 citrus almond dressing 

1 garlic clove 
2 tbsp of almond butter (or peanuts) 
2 tbsp of low sodium tamari or soy sauce
1 tbsp of water 
2 tbsp of orange juice 
1 tbsp or lime juice 
2 tbsp of our maple syrup or any other sweetener 

Prices all dressing ingredients in a mini processor, the dressing may seem watery   At first but it thi cakes if you let it sit 

Raw vegan pad Thai


This is such a simple and awesome lunch I'm loving this at the moment 

Pad Thai:
 1/2 red bell pepper , thinly sliced 
1 zuchinni, julienned or spiraled 
1 big carrot , julienned of spiraled 
1/2 small purple cabbage , thinly slices
Green onions thinly sliced 

For the dressing : citrus almond dressing 

1 garlic clove 
2 tbsp of almond butter (or peanuts) 
2 tbsp of low sodium tamari or soy sauce
1 tbsp of water 
2 tbsp of orange juice 
1 tbsp or lime juice 
2 tbsp of our maple syrup or any other sweetener 

Add the vegetables into a large bowl and toss with hands to combine 
Then blend all the ingredients for the dressing . It may look a bit thin at first but if you let it sit ir will thicken 
Pour on dressing and enjoy

Baked carrot cake oatmeal

This oatmeal is my favorite for sure. I'm so addicted. 
What you'll need 
3/4 cup of oats
1 banana
1 small grated carrot 
1 chia egg (1 tbsp of chia seeds with two tbs of water and let it soak for a few minutes) 
1 handful of raisins 
1 handful of any nut( I used almonds) 
Cinnamon 
Vanilla 
1 tsp of baking powder 
Any sweetener of your choice 
One tsp of raw cane sugar/brown sugar (optional) 

Peel and grate your carrot and mix with your oats, nuts, raisins, baking powder, cinnamon, then just blend your banana with some water to make you "banana milk" add to your dry ingredients with the chia egg untill you have a creamy mixture and add your vanilla, then you can top the mixture with the cane sugar and add some nuts so the top of your oatmeal can get a crunchy texture(you can skip this step if you want to) bake at 350 for 40 minutes or until your oat is slightly browned on the top, and that's it too your oatmeal with some almond milk or the rest of you banana milk and enjoy!

Pumpkin and white beans stew

What you'll need 
One can of white beans 
Pumpkin 
Butternut squash 
One carrot 
One small onion 
1 tsp of cumin powder 
2 tsp of curry powder 
Salt and pepper 

Cut all your veggies and add your beans to a pot add around 1.5 cup of water and all your spices, and simmer for about 35 minutes until the beans have absorbed all the water and the veggies are soft.

Spicy black bean, quinoa and mango salad

What you'll need
1 mango 
1-2 tomatoes 
1 red bell pepper
2/2 cucumber 
Canned or fresh corn 
Celery 
Spring onions
Cilantro 
Around 1/4 cup of quinoa(you can use all the quinoa that you want) 
Around 1/2 cup of black beans 
The juice of 1-2 lemons
One tsp of raw cane sugar 
Some chili flakes tu make it spicyyy 

 
Wash and cut all your veggies, cook your quinoa and beans if they are dried, add to your salad, then squeeze your lemons and add a tsp of the cane sugar, add some chili flakes and wala, Mexican style

Baked almond brownie oatmeal

What could it be better than this? Dessert for breakfast, and healthy, this is just perfection. This oatmeal is just like a cake.

What you'll need: 
3/4  cup of oats 
Around one tsp of organic cacao(fee free to use cocoa if you want to) 
banana 
Cinnamon 
1 tsp of baking powder 
Vanilla 
Silvered almonds ( you can use whole or any other nut if you want to)
sweetener of your choice 

Preheat your oven to 350. Blend your banana with some water until you have a creamy milky liquid(don't add to much water) then just mix all the ingredients together, add the banana "milk" little by little until you have a creamy mixture. Then pour into a small baking dish and bake for approximately 20 minutes or until crispy and lightly browned on the top, then add more almonds and the rest of te banana milk and enjoy!

Baked banana/pumpkin oatmeal

This was so good, I seriously have NO words to explain how tasty this was 
So sweet, so gooey, heavenly.
 
What you'll need 
2/3 cup of rolled oats( add more if you want to) 
1 banana 
Pumpkin puree( I made my own, recipe below but you can use canned too) 
Cinnamon
Vanilla
One tsp of organic cane sugar(feel free to use any sweetener you want) 
One tsp of baking powder 

- blend your banana with around one cup of water(or maybe less) to make a creamy banana milk to use instead any non dairy milk 
-then just mix all the ingredients together untill you have a creamy batter (add the banana milk little by little to the mix until it gets really creamy) 
-bake at 350 for 30 minutes or more until you oatmeal is completely cooked, it should be kind of crunchy on the outside 


Homemade pumpkin puree 

What you'll need 
-pumpkin, cut in cubes
-vanilla extract 
-cinnamon 
-sweeatener 

Boil your pumpkin with the other ingredients untill the pumpkin is really soft, then transfer the pumkin to a blender and add a little bit of the water that you use to boil, blend and wala, you have home made pumpkin pure

Baked cinnamon raisin oatmeal + Banana milk

What you'll need
For the banana milk( you could use just any non dairy milk too, but this taste way to good) 
1.5 frozen banana blended with water until you get a milky texture 

For the oatmeal
1/2 cup of oats (or more of cours)
Cinnamon 
Raisins 
2 tsp or organic cane sugar 
Vanilla 

Mix all the ingredients(including the milk of your choice) together until you get something like a cake batter, then just bake at 350 for 30 minutes or until it's brown and crispy on the outside 
This could be more easy

Easy vanilla banana "pudding"

Blend 4 frozen bananas with one unfrozen nana and some vanilla, add around 1/4 cup of water (you could add little by little until you get the desire texture) and wala! Just top with more nanas and whatever the hell you want, I topped mine with cane sugar. This recipe couldn't be more dumb

Fat free potato fries

I love this potato fries, they are so yummy and guilt free, what could it be better? 
 Ingredients: 
3-4 potatoes washed and unpeeled, cut into 1/4 inch x 1/4 inch lengths 

Black pepper, cumin, oregano,garlic powder,  salt{or you could make them salt free} you can add any herb or spice of your choice 

Instruction:
Place the cut potatoes on a cookie sheet line with parchment paper 
Bake at 400 degrees for 15 minutes 
Take out and flip fries over and bake for another 15 minutes, or until they are golden brown and puffed up

Cumin lentil vegetable stew

Ingredients .
1 cup of dry lentils(you could use canned as well) 
2 potatoes 
1 tomato 
1 carrot
1 onion 
Swiss chard or spinach 
Cumin 
Cinnamon(optional) 
Black pepper
Salt 
Chili flakes 

Wash, peel and chop all your veggies, if using dry lentils you have to cook them before adding the veggies until thy are soft (not too mushy) if using canned just add all together in a casserole, with 1 1/2 cups of water put it in high and start cooking, after 10 minutes put te temperure down and simmer for approximately 20 minutes, then check that everything is soft and cooked, add more water if it gets too dry. 

Mango salad

Ingredients:
one mango
one tomato
a handfull on cherry tomatoes
one red bell pepper
cilantro 
celery 
spring onions
optional: corn and peas

Dresing:
lime juice 
raw organic cane sugar 
and chilli flakes
optional: a tbsp of mango chutney 

Chop all the ingredients and mix everything


Oil free granola

Ingredients:
3 cups of rolled oats
one cup of silvered almonds
one cup of raisins
some chopped dried figs
1 cup of red quinoa 
1 tbsp of chia seed+3 tbsp of water( let it soak to make a chia egg)
1/4 cup of organic cane sugar 
vanilla extract
cinnamon


in a pan in high heat put the brown sugar with some water to make a syrup dont let it burn, then in a bowl mix all the ingredients without the raisins, put the brown sugar syrup on top,spead the mixture on a large baking sheet,  bake at 300 degrees for 45 minutes or more, giving it a stir after about 30 minutes.
Stop when the granola looks toasty brown and smells incredible.

Any other thing you could add in:
cacao powder
dried apricots
dried apples
dried pineapple
dried mango

dates
golden raisins
craisins
dried cherries
dried blueberries
coconut flakes
any seeds (pumpkin, sunflower etc 
Liquid sweeteners (maple syrup,, agave or brown rice syrup)

Datorade

This is one of my favorite smoothies, is so sweet, so delicious and so creamy, it taste just like caramel.
Ingredients:
18 dates (i use deglet nours but any kind will work)
a cup of coconut water
vanilla

I soak my dates before for around one hour, doing that makes them easier to blend.
Blend all the ingredients in a blender untill the dates are all blended
Note: dont forget to pitt the dates first

Tropical papaya sof serve.

this is my favorite banana combo( well one of them)
just frozen banana with papayas blended until you get a soft serve/pudding texture
I swear this is perfection 

I topped it here with more bananas and papaya, it was heavenly. 

Very berry ice cream

Ingredients:

For the ice cream:
4+ bananas
frozen berries
vanilla
natural sweetener

put everything in the food processor and you have berries ice cream

Blueberry sauce
Fresh blueberries
1-2 tbso of organic cane sugar
vanilla
in a pan put all the ingredients in a low heat and mix untill you have a syrup texture 



Chocolate ice cream.

Ingredients
4+ Frozen bananas
one tbsp of raw cacao/carob
4 dates
vanilla

Trow all your ingredients in a food processor and you got chocolate nice cream

Banana Cereal

banana cereal, what the hell is that?
well, banana cereal is just another cool way to eat bananas
what do you need for that? well basically just bananas and maybe some vanilla and natural sweetener if you want to
Just blend around 2 bananas with some water, vanilla and the sweetener, and this will be your milk then juts top it with more chopped bananas, you can add berries, chopped apples, granola, raisins or anything you want, i really love making this i think is so fun and tasty

Variation:
banana cereal with caramel milk 
for the caramel milk you will need around 12 dates(i use deglet nour dates but any kind will work ) some vanilla and one banana 
blend first thedates with some water until it gets like a milky texture add banana and vanilla and BAM you have a caramel milk, then chopp whatever you want in it.
